Vinification of Beyra Riesling White Wine 2021: Manual harvesting with whole cluster crushing in order to preserve the full primary potential of the grapes. Fermentation in stainless steel tanks at a temperature between 16 - 17ºC for a period of about 20 days with indigenous yeasts. Aging with stirring of the lees – "batonnage" until bottling at the end of January 2019, followed by bottle aging for 14 months in the cellar.
