Winemaking of Quinta dos Bons Ares Branco 2021 Wine: For this wine, a first quality selection of the grapes was made, which were harvested and placed in small boxes, and then cooled during 12 hours of skin maceration at the Quinta dos Bons Ares winemaking center. Upon reception, they underwent a second selection before falling by gravity into the presses where they were subjected to gentle pressing cycles. The clean must fermented slowly and at a low temperature to preserve the aromatic potential, of which 10% fermented and aged for 7 months in French oak barrels.
