Vinification of Borges Quinta da Soalheira Reserva Tinto Unoaked: the production of the vine, over time, decreases, resulting in more balanced grapes and wines of high concentration and unique elegance. With the purpose of revealing all the potential that the vineyards of Quinta da Soalheira offer, this unoaked wine was produced without aging in barrels, thus allowing the intense and fresh aromas of the grape to stand out. Total destemming of the grapes followed by gentle crushing. Brief pre-fermentation maceration followed by fermentation in skin contact for 6-8 days at a controlled temperature of 28 ºC with relatively frequent pump-overs. After alcoholic fermentation, a period of maceration in contact with the skins is carried out, after which the wine is separated from the skins with which it fermented. The wine ages in stainless steel tanks, undergoing micro-oxygenation to enhance its aromatic profile.
