Vinification of the Wine Conde D Ervideira Private Selection White 2021: The grapes are destemmed, not crushed, and sent to "vinimatics", where they remain for 6 to 10 hours at a controlled temperature not exceeding 12ºC. They are then pressed and sent to the cold chamber, where they ferment at a controlled temperature between 13 and 15ºC. Aging: 10 months in new Hungarian oak barrels.
