Vinification of the Wine Conde D Ervideira Private Selection Tinto 2019: From the selection of the best batches of grapes, vinified grape by grape. The Aragonez ferments in "vinimatics", while the other two varieties, Trincadeira and Alicante Bouschet, ferment in lagares equipped with mechanical foot-treading robots. The process takes place at a controlled temperature of 25ºC. Aging for 12 months in mostly new French oak barrels. The blend is then bottled, remaining in the cellar for a period of 18 months.
