Vinification of the Covela Fantastico Branco 2015: Manual harvest. Harvest organized by vineyard plots to ensure picking at the right moment. Transport in small boxes to avoid crushing. Manual selection of the bunches. Cold skin maceration. Gentle pressing. Fermentation and aging in French and Austrian oak barrels for 19 months. No stabilization or filtration (sediment may form in the bottle). Produced only in exceptional years.
