Vinification of the Invisible Ervideira White Wine 2021: From a selection of the best batches of Aragonez, and the result of a night harvest (moon harvest), this wine was born – Invisible. The must is transported in a refrigerated truck to the Winery. There, it is gravity-fed into the cold chamber, where it remains to settle for 24 hours at low temperatures. After this process, the must is inoculated with selected yeasts and fermentation takes place at a controlled temperature of 12º C, for 15 days.
