Vinification of Ervideira Late Harvest Wine 2018 (Box): From a plot of Antão Vaz, the best grapes were selected, which remained in the vineyard until November. This allowed for the development of rot in these berries, increasing the concentration of sugars. Fermentation is subsequently carried out at low temperatures around 12ºC, for about 30 days.
