Located south of the town of Ancas, in the municipality of Anadia, in the privileged area of Figueira da Costa. Vinification of the Sidónio de Sousa Special Cuvée Brut Sparkling Wine: the grapes are unloaded into the membrane press, where the free-run juice is extracted without pressing. The must is cooled for 24 hours, decanted, and transferred to a stainless steel tank where fermentation takes place, with temperature control. After fermentation, the wine naturally decants in the tank and is racked clean at the end of the year, at which time it is prepared for sparkling wine bottling, with wild yeasts. The sparkling wine bottles go to the cellar to undergo the second fermentation in the bottle at a controlled temperature and absence of light. After fermentation, the bottles remain in the cellar, aging until riddling and disgorging are performed without the addition of sugar, from which point the product is ready for commercialization.
