Viticulture: Made from selected grapes from small plots of vineyards approximately 20 years old, cared for to produce quality wines. Poor granitic soils and rocky schist, infertile with low yields in quantity but where the priority is quality. The grapes are also cultivated under a certified integrated production regime. Vinification of Rumo Tinto: The grapes are all manually selected and after sorting and crushing, they are transported by gravity to stainless steel tanks and cold pre-macerated. Fermentation is spontaneous and the post-fermentation maceration lasted approximately 22 days. Aging: 15% aged for 6 months in used French oak barrels and the remainder in stainless steel.
